Healthy nutrition with fresh products is very important to us. Therefore it was clear from the start that we wanted to grow as many vegetables, herbs and fruits as possible at Taíba Surf & Yoga.

Coconut water
What thrives particularly well in Northeast Brazil are coconut palms. When you harvest the coconut unripe and green it contains a sweet and clear liquid. This coconut water can be savored directly from the coconut with a bamboo straw. It’s delicious when served ice-cold and affectionately named coco gelado.

Homemade Coconut Milk
The coconut milk, on the other hand, is obtained from the flesh of the mature coconut. At Taíba Surf & Yoga we have the privilege to use coconuts from our very own tropical garden. We enjoy preparing fresh and natural coconut milk for our guests. And this is how it’s done.

1. First, the coconut must be opened. The best way to crack the hard shell is with a hammer.

2. Then remove the flesh from the shell. In Brazil a kind of rasp (Raspador De Coco) is often used.

3. Place the flesh in a mixing vessel, add water (1:3) and mix until it forms a milky liquid.

4. Pass the liquid through a sieve.

Et volià, the coconut milk is ready. It keeps in the fridge for 3-4 days.

We especially love to use fresh coconut milk for our homemade chia pudding. The pudding, fresh fruit as well as homemade bread and yoghurt is daily served at breakfast on the terrace of our Surf Villa. This powerful nutritional punch will give you just the kick you need to hop on your Kitesurfboard, surf the perfect wave (Kelly Slater swears by chia pudding) or simply take a walk on Taíba pristine beaches.
